From the player's point of view; one serious injury or health-related issue and your career could be over before it has even started—and you risk spending the rest of your life living from pay cheque to pay cheque.
Sign a professional contract at Bayern at 16 and you'll have earned £150-300k by the time you're 17, which is a lot of money for 99.99% of these players and their families.
Selfishly speaking, as an Arsenal fan, it's yet another beautiful by-product of Brexit. Frustrating, no doubt, but there certainly is an ethical discussion that can be had about clubs offering professional contracts to children in their teens.

He wanted a clear route to first team football and Bayern have a better track record of offering that.
People underestimate how damaging Arteta's false promises have been. You can't block players from going on loan telling them they will get game time in cup completions and then expect them to be happy when instead they make the bench a few times.
