They make or attempt to make 3- 4 of these runs, 2 times they would be stopped/ tackled, 3rd one will probably hit a defender, but the 4th one will go in. Doesn't happen every day , but does happen to these players with close ball control and intelligence.
The defender has to make a quick decision as to commit himself fully or let him run more a little bit. But again,he has to keep track of the other guy , lurking around,who could pick up a killer pass in the open and strike. And, last but not the least, a full blooded tackle right on or outside the box will result in a free kick which could be lethal too.
All these considerations will make the defender dither, and could be fatal.

When you consider a wide forward and how they operate, as a defender you go to intercept. Now diving in is never a good option because its easy to be side-stepped, so you "jockey" which forces the attacker to have to beat you or do something. If the attacker mis-controls the ball and its a cert that you can win it, by all means dive in.
The focus of the defender should solely be on the attacker, if there is the potential of a 2v1 against the defender (an overlapping run for example) the defender is not expected to be able to cope with that, the threat is the player on the ball. If there is an overlap there is nothing the defender can reliably be expected to do about it, at that point its best endeavours only.
