Some very good mentions so far.
Will add "One", "Fade to Black" and "Nothing Else Matters" covered by Apocalyptica. It's incredible how Metallica's music sounds so much more profound when played by a quartet of fine cellists.
Whilst I rate Metallica as music writers, I can't bring myself to listen to their music. Always felt they have the tendency to butcher their own compositions.

I actually like the Yusuf Islam version but Boyzone are as good as it gets.
I'll also add Words by them as well

But want to say in today's climate of pulling down statues and the getting rid of the southern flag
