Different sites say different things and I reckon Arsenal.com will use 'undisclosed fee' for some.

If you spent 30mill then an undisclosed fee on top of that (rumoured to be around 15mill but nobody knows), who would win? Guy who said 30 or 45? On transfermarket I think it would say 30mill even though it would more likely be 42-48mill.

Yeah I know what you mean, I forgot about the undisclosed. I will use Skysports for it. Throughout the transfer window they always show how much each club has spent. So I'll go on that figure.
